Here is everything you ever wanted to know about the anatomy of an egg and probably a little bit more!<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/eggs.ca\/wp-content\/uploads\/2024\/06\/egg-anatomy-EN2.jpg\" alt=\"egg anatomy EN2\" title=\"\"\/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Shell: <\/strong>The egg&#8217;s first line of defence against the entry of bacteria. Can be white or brown, depending on the breed of hen; the nutritional value of the egg is the same. Approximately 10,000 tiny pores allow moisture and gases in and out.<\/li>\n\n\n\n<li><strong>Air Cell:<\/strong>&nbsp;Formed at the wide end of the egg as it cools after being laid. The fresher the egg, the smaller the air cell.<\/li>\n\n\n\n<li><strong>Albumen (al-BYOO-min):&nbsp;<\/strong>Albumen is the egg white and represents 2\/3 of an egg\u2019s weight. There are two layers: thick and thin albumen. Mostly made of water, high-quality protein and minerals.<\/li>\n\n\n\n<li><strong>Yolk Membrane (vitelline membrane):<\/strong> Surrounds and holds the yolk. The fresher the egg, the stronger the membrane.<\/li>\n\n\n\n<li><strong>Yolk:<\/strong> The egg&#8217;s major source of vitamins and minerals and represents 1\/3 of an egg\u2019s weight. Colour ranges from light yellow to deep orange, depending on the hen&#8217;s feed. The colour of the yolk does not affect the egg nutritional value.<\/li>\n\n\n\n<li><strong><strong>Chalazae (kuh-LEY-zee):<\/strong>&nbsp;<\/strong>A pair of spiral bands that anchor the yolk in the centre of the thick albumen. The fresher the egg, the more prominent the chalazae.<\/li>\n\n\n\n<li><strong>Germinal Disk:&nbsp;<\/strong>Appears as a slight depression on the surface of the yolk. The entry for the fertilization of the egg.<\/li>\n\n\n\n<li><strong>Shell Membrane:<\/strong>&nbsp;The egg&#8217;s second line of defence against bacteria. The eggshell colour depends on the breed of the hen. Generally speaking, white shell eggs come from hens with white feathers, while brown shell eggs are produced by hens with brown feathers. In Canada, all Grade A eggs are categorized by weight, not size or shape, so sometimes eggs in the same carton may appear to be different sizes, but their weight will always be within a similar range.<\/p>\n\n\n\n<p>The following minimum weights are used to classify eggs in Canada:<\/p>\n\n\n\n<p><strong>What the sizes mean:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Peewee &#8211; less than 42 grams<\/li>\n\n\n\n<li>Small &#8211; at least 42 grams<\/li>\n\n\n\n<li>Medium &#8211; at least 49 grams<\/li>\n\n\n\n<li>Large &#8211; at least 56 grams<\/li>\n\n\n\n<li>Extra Large &#8211; at least 63 grams<\/li>\n\n\n\n<li>Jumbo &#8211; 70 grams or more<\/li>\n<\/ul>\n\n\n\n<p>Unless otherwise specified, more recipes are written using large eggs. Generally, medium and extra large eggs can be used instead of large eggs for recipes, unless you\u2019re working with whipped egg whites.
